I am planning to buy Intel i3 10100 mini pc fanless with Corsair Vengeance 32GB DDR4 SODIMM 2400MHz and Samsung 970 EVO PLUS 500GB M.2 NVMe PCIe High Performance as it was good enough for workstation and 4K UHD for you tube video, photoshopped and video encoder with Microsoft Windows 10 Pro 64 bit and Linux Mint 20 Cinnamon 64 bit to replaced my desktop Intel i7 2700k.

I would have thought more cores/threads would be useful for you here so the i5 with 6/12 could be a large boost vs. 4/8 on the i3.
As it's fanless I'm surprised you can't get the T variant of these. 10100T / 10400T etc. Those chips have 35W draw rather than 65W.
