The specific card I want is the BFG GeForce 8800 GTS OC 640MB GDDR3 HDTV/Dual DVI (PCI-Express), I was wondering what the minimum CPU is ill need to prevent bottlenecking, and what is the process in finding this out so I can do it on my own in the future?

Ignore my sig, its the now piece of crap sitting behind me not working, so im getting a new rig, ive ordered an AMD Athlon 64 X2 Dual Core 4200+ 2.20GHz (Socket AM2), but read that its a bottleneck for the 8800, so im thinking ive made a poor choice in CPU, so was wondering what the minimal CPU will be, and hopefully can change my order before OcUK ship it. I also ordered the Asus CROSSHAIR, which im certain will be fine with both CPU and GFX card without any problems.

notch it up to 2.4 maybe 2.6 and it should be fine
that overclock will be easy with the crosshair

What kind of CPU temps should I expect at idle then before overclocking, because I want to use the stock fan on the CPU, for the low noise, I have a ThermalTake Venus 12 CPU fan on the rig in my sig, I dont know if it will be compatible with my new CPU, other then that its REALLY noisey, but it did keep my CPU at 34'ish when idle.
