I have a laptop with an i3-1115G4, 4GB RAM soldered on the motherboard and a SO-DIMM slot. There's a 32GB module in the slot and Windows 10 shows 36GB RAM. I guess 8GB of that RAM works in dual channel and the other 28GB are in single channel mode. Also guess that Windows will first use the fast dual channel memory and only when that's full it will start using the slow single channel RAM. Is there any software that can show me if this is the case?

You are correct that it will apply dual channel to the first 4Gb of the sodimm in combination with the soldered ram, and single channel access for the remaining ram - Intel call this "flex mode"

As for testing it, you'd need a benchmark that shows memory bandwidth across the whole memory capacity, but I'm not aware of one.

Something like passmark, may report it, but I'm not sure:
