Are there any MMOs that are less focused on killing stuff and more on developing your character through other means, perhaps economy etc? Not ones with crafting trees on the side, but where it can be the main focus of your character?

...or something that is just less revolved around killing mobs?

SWG had various professions that required no killing, it was basically the crafting and entertainer profession, the game is ending December 15th this year though, but i'm pretty sure EVE is a good alternative.

EVE's no good. For the person I'm asking for it's far too complicated and they like to have their own avatar/character.

You can make your own avatar ;)
You might even be able to see it properly every now and then! :p

You never need to undock in theory if you want to just play the markets and such.

Mmm I might just try them on minecraft. How much of that is defending from mobs?

Minecraft is still in beta, the next patch due any time between a week to a month (1.8) will introduce the 'Adventure Update' which introduces a lot of new features such as:

- Leveling system with XP.
- Creative Mode (building stuff without needing to mine materials)
- New monsters; Enderman, Silverfish and Blue Spiders.
- NPC villages and strongholds.
- A bunch of new and modified items.
- Other random features that really aren't worth mentioning. D:

Minecraft is amazingly fun especially if you can find a nice server to join, try singleplayer out first to get to grips with items and how to craft..etc

Archeage

it has all the features of your generic MMo's but there's a lot of work being dedicated into allowing players to build their own keeps, towns and use crafting/trading as a main focus.

still in development with some closed beta activity, but it does have the potential to offer something a bit different...
