So I've finally moved to Windows 11, never really liked the looks of it. And, unsurprisingly Windows 11 isn't that great. Issues I've had so far, height of programs in the taskbar is too high, can't have multiple lines, width of programs are variable, rounded corners are terrible and a few other thing.

So what is the best way to get a classic UI that isn't dumbed down for the smartphone generation?

I use Explorer Patcher.

This allows me to get back the Windows 10 start menu, right click menus, get rid of rounded corners and also quick launch.

It's free to use as well, might be worth giving it a try and see if it does what you want

Couldn't say if these will do all the things you want to do, or if you're willing to spend money, and i can't personally vouch for them as i don't/won't use Windows 11.

Having said that I've read a lot of good things about...
That's the free option and it's developed by the same guy who made 7+ Taskbar Tweaker.

Then there's the paid option that's more feature rich and extensive in what it can do...

To add a video for the UI type utilities that are available, well a few anyway....

I have use StartAllBack for some time now, as the dev seems to push fixes for some of the dev builds in front of the stable branch I have not had issues when Windows does a cumulative / feature type update.
There are also free options, noted in the video.

Does anyone know of a windhawk mod that makes it so that when you right click a file you dont have to then click again on show more options to access "send to" "delete" "copy"

Its such a downgrade to have to do an extra step every time I want to access these options that I use the most.

Open command prompt with admin permissions and run this:
reg.exe add "HKCU\Software\Classes\CLSID\{86ca1aa0-34aa-4e8b-a509-50c905bae2a2}\InprocServer32" /f /ve

Then reboot. That mini context menu is a pain in the ass.
