if you really want a 5870 i would get a 6870 instead or at least wait until the 69** series are out sometime in November
And the 6*** series x-fire scaling is very good much better than 5870 scaling

This is purely speculative, but the 6950 should be faster than the current 68xx cards and I would guess, to be under £300 - probably closer to £250 I reckon.
No idea about your monitor question though, as does everyone else who have posted so far

If you don't mind waiting, then there will be a 69** card that is well within your £300 budget. In fact, their fastest single GPU 69** should be below £300 to make room for the 2 rumoured Dual GPU cards.
