Not sure which to go for

Personally, I would go for the Dell 30in.

It is a fantastic monitor which is so big and so high resolution - making games just look amazing. Plus, when you aren't gaming you have a 2560x1600 resolution IPS monitor play around with in windows.

Is the dell a 120hz monitor? does it really make a big difference?

No, the Dell is a 60Hz monitor (as all IPS panel monitors are at the moment).

120Hz does make fast motion feel smoother - so if you are mainly using the system to play FPS games then a 120Hz may be more suitable (though you have to deal with the drawbacks of TN panels - like narrow viewing angles and not as accurate colours).

However, if you will be playing mainly slower-paced games as well as a lot of desktop use, then I think you will find the 30in 2560x1600 IPS screen a lot nicer. Also, please bear in mind a lot of people play even fast-paced games (like BF3) on IPS panel monitor and find the gaming experience very good.
