The default size of the gnome terminal window in Ubuntu can be modified by editing
/usr/share/applications/gnome-terminal.desktop
This is the file that is parsed when you select
Applications->System Tools->Terminal
Editing this file will affect the menu for all users on the machine.
Modify the Exec= entry to read:
Exec=gnome-terminal --geometry=132x24
Remember, you'll need to do sudo before editing the file.
