More RAM or Faster Processor

HI. I'm just about to build a new system

Proposed spec:

Tuniq Tower 120 CPU Cooler

My biggest dilemna is:

Would you sacrifice extra RAM (2GB) and buy a faster processor- even a quad core, or get more/faster RAM instead???

I have a Tagan 530w PSU- should I go bigger for the new build ie will twin 8800s run ok?
 
Thanks for the replies! So I can stick with the cpu, should I go for the 640 rather than 320 8800 gs and if I'm sticking with 2GB af RAM, how do I choose the best one to go for- Is it just get what you pay for, or is it like the cpu's- after a point, there's v little gain?
