£400 boards just have more features (slots/ports etc) and other overclocking features such as voltage measurement pads to attach a multimeter to ensure voltages are bang on, other extras such as the Asus Rampage IV Extreme with its "OC key"
Just more and more stuff that you or indeed most users will never ever need, the performance of cheaper boards is still good, take the Gigabyte X79-UD3 for example £180 and it did this using LN2 - http://www.tomshardware.com/news/Gigabyte-X79-UD3-Motherboard-F7-BIOS,14397.html
