Move server from one SAN to another

Here's an interesting little problem.

Got a windows 2008 server that boots from SAN.
Now this SAN is out of warranty and being replaced by an MSA2000(would have liked an EVA, but thats another thread).
So now we have to move the servers boot disk from one SAN to another.

Any disk imaging stuff out there like Acronis that is SAN aware for bare-metal restores.

Once thats done have to move all the data off the other SAN drives to the new box but thats the easy bit.

The only elaborate solution I can think of is having another SAN attached device then browsing the datastore and copying it to that machine and then back to the new SAN.

Depending on how you connect it you could present that data (obviously when that server is off) to the new server and away you go. I've no idea if it will work when you move over SAN's but it's worth a shot.

been emailing Acronis and it seems they have software for doing what we want. Its the universal restore option, fro moving from one hardware platform to another, but we are just switching the boot disk from one san to another.
