Hello

I'm just wondering if you goto start > run > type in msconfig, goto Boot tab, click advanced options.

Number of processors.

I have a 6 core processor - AMD Ryzen 5 3600X, should I select 6 in the list, would it make much difference?

Leave it. Don't change anything there. You could end up doing something wrong instead. If task manager shows all cores (12 logical cores in your case) and all your RAM then it's fine.
 
As above unless having issues leave that option unticked and the OS should automatically select the correct value.
