So I have today replaced my monitors with 3 Dell 25" 1440's and on HDMI & DP I get 2560 x 1440 but on the DVI I am using a DVI to HDMI cable and I only get 2048 x 1152 ...

Does anyone know if this is a GPU setting or is this down to the cable ??

I did have 3 25" AOC 1440 monitors a few weeks back and they all worked fine at 1440 with DVI to hdmi cables ...
