Really, really can't say anything of substantial merit for the Gamecube. I was going to say Resident Evil 4, but that's already on other platforms. It's not really a game you'd rush out to buy a Gamecube for as a result. I can't think of anything for the Saturn too. I've played Nights and Panzer Dragoon, but I don't know, those are 'cult' or 'niche' for a reason.
