My copy of Windows 7 Professional has arrived...

... at my parents house in UK. I live in China.

I won't be back to UK until next year. Is there any way I can download a copy and get my parents to tell me the product key? Or am I going to suffer waiting another few months?

That'll work fine, make sure it's the same type..

for example Home Premium, non upgrade etc..

Don't forget to do a hash check of what you download .
I use Hashtab 3 download here:

just right click on image and choose properties and a hash check tab is available

Indeed, it'll only take a few days if you send it UPS or something.
