Asus P5Q Deluxe Intel P45 (Socket 775) PCI-Express DDR2 Motherboard

Zalman CNPS9700-LED CPU Cooler (Socket 754/939/940/AM2/LGA775)

Asus DRW-2014S1T 20x DVD±RW SATA Dual Layer Rewriter (Black) - OEM

change ram to a higher speed and about 4gb.. also change the cpu cooler to an arctic freezer pro 7, or something similar in price :)

8Gb provides little benefit to 4Gb and as above, use the saved money upgrading to better overclocking ram (if that is what you want).

Also if you're thinking of ever going crossfire then the 520W PSU won't be enough. I'd upgrade to the 620W version so to account for expansion.

Yep, good ideas.

Ok so I'll change the memory to:
GeIL 4GB (2x2GB) PC2-8500C5 1066MHz Black Dragon DDR2 Dual Channel Kit (GB24GB8500C5DC)

Change the PSU to:
Corsair HX 620W ATX2.2 Modular SLI Compliant PSU (CMPSU-620HXUK)

What would you advise for HSF, I'm not sure which ones would fit?

Also is it worth considering the E8600 over the E8500, is the performance increase worth the extra money?

Exactly what i was about to advise... good choice!

As for HSF... Freezer 7 Pro is always a solid choice. Other than that... Thermalright or Zalam personally.
