My New PC Specification (comments please)

Going for the retail is fine, however note that if you overclock your CPU you void the warranty anyway*.

I don't know that the Nforce 750i chipset is particularly unstable but it is still fairly new and Nvidia chipsets haven't been the most reliable recently in stability terms. In comparison the P35/X38s have been tested pretty extensively by more people because they have been out for longer.

*nb there are some CPUs on OcUK that will guarantee you 3ghz (most will reach it anyway with or without the guarantee) but the extra cash buys you a guarantee that you can overclock to that level and your warranty will still cover you.

Dont bother with the so called overclocked cpus. If it goes wrong and intel lady/bloke will ask you if you overclocked your cpu just say no. ;)

I'm not recommending them as such, I'm pointing out that overclocking voids your warranty so in the case of a price difference (and especially if getting an aftermarket cooler) there is no compelling reason to go with retail.

I was unaware of overclocking voiding warrenty so thank you for that bit of information. In the this case both OEM and retail are the same price for this week, so I would go for retail over OEM.
