Update bios, fit 5800X3D, upgrade ram to 32GB while you’re at it and wait and see. Graphics cards are horrendously overpriced right now.

forget to say my motherboard is ab350 gaming 3

It depends on how much you want to spend and what your performance expectations are? Even then we wont know how the game performs until it's actually out.

That board supports the 5800X3D so you're good to go in that regard, coming from a 1080ti I'd personally be looking at a 6800 or 6800Xt as a minimum.

If you absolutely can't wait, I'd be looking at something like this coming from what you have:

My basket at OcUK:

Total: £1,136.96 (includes delivery: £7.99)

It actually includes a copy of Starfield too, so that's some of the cost saved.

The above is assuming your PSU and case can handle the GPU.

A more budget orientated upgrade that would still offer decent uplift:

My basket at OcUK:

Total: £737.96 (includes delivery: £7.99)

Short of having any performance reviews out yet: your CPU meets the minimum spec, your graphics card is above the minimum spec.

or any other of the latest games

Which ones? Hogwarts and Cyberpunk will both be playable at 1440p, but lowering the detail levels and/or using upscaling (like FSR) would be advisable.
