getting 1 really good gpu then gettting another one to sli/xfire down the road makes more sense in terms of an easy upgrade path,

never been big fan of corsair hydro series, air cooler tends to perform on par and in most cases better for less cost, but they are bigger and take up more room inside case.

I would, or a single GTX 570. Not as powerful but less potential issues (sli glitches, higher minimum fps, power consumption, noise, heat...). Plus easy path to upgrades (future xfire), make sure PSU has 4 PCIE connectors and 750W power or over (ideally). Well, the HX850 is ideal really.

Mostly your preference(will you be ugrading the HW?, if not, then go for the SLi)

But looking at your build, you will propably want to upgrade, and then just pop another 570 in there for the SLi

flick of a switch unlocks the shaders so you have a 6970(tho it's not guaranteed), oc to ~950/1400 and you have a 580 equalling(beating in some cases) performance for a fraction of the price.

Why the H100? The Silver Arrow / NH-D14 only a bit less performance, but less noisy. Either one of these, or a proper water cooler.

Your money anyway

Hope it will fit in the 600T as well. These monsters can be a problem to fit in a case.
