i'm still unfotunately with tsohost and they recently updated the cpanel hosting i had with them. one of the many issues i noticed is that the mysql time zone is off by 8 hours. what can i do to fix this?

If this was not a problem before, then isn't it that the hosting provider needs to set the MySQL time setting back to whatever it was before the update? i.e. it's their MySQL configuration issue on their server.
