N00b i7 Memory Question

I am looking to build a new PC (my last build was a p4 some 7+ years ago)

With the price drop of the i7 950 I am looking at possibly going down this route.

I dont think I need a 6gb Ram for this machine, 4gb would be enough, do I need to go for 3 sticks of memory for the 1366 socket motherboards or could i get 2x2gb sticks,

You can indeed run memory in dual channel configuration of X58 boards, it works fine.

However, like RJC points out, you may as well get a cheap 1333MHz triple-channel set instead - the memory bandwidth will be much greater than two slightly faster sticks in dual channel.
