Putting it under the grill isn't the best way of cooking it. Though this depends on how big your chicken chunks are.
What I do is marinate it, then either wrap in baking foil and stick it in a medium oven, or pan fry it with a little bit of oil and some chopped peppers.
Nandos Lime & Coriander peri peri marinade is the bom-diggedy - cut some strips of chicken breast, marinade for an hour at least then throw in a hot wok with some finely diced onion. Serve with rice.
