Need a bit of help.

What do you call the accesory/disc for the dremel for cutting through thin metal? e.g. motherboard tray.

Noob question I know.. but I just really haven't go a clue what its called.

It's just called a Cut-Off Wheel. There are several sorts - there is a No 409 pack of 36 pieces which are about 1" dia and aren't bad if used correctly but can be a bit flimsy, and you can also get 1.5" dia Reinforced Cut-Off Wheels which are stronger due to the reinforcement.
