Hmmm out of those two the 7900GTX is faster.
However if you arn't particularly bothered about having a ATI card the X1900XT's on the this weeks special make more sense (on a cost v performance ratio at least).
Also look at the 7900GT / X1800XT both offer excellent performance and are both considerably cheaper than eitherthe X1900 / 7600gt's in SLI.

In answer to your question, the 7900GTX will be faster. I distinctly remember people trying SLi'ed 660GT's and hoping this would flatten the top end cards but it just didn't - I shouldn't imagine much different here. When you slap on the AA/AF, the GT's SLi'ed just fell over.
The above have given good advice though. The cost of say an X1900XT-X or XT is amazing value for money and despite the fact that nV prices will drop soon, I doubt you will see as big a drop as this. £281 for the 3rd fastest card around is amazing value. The GTX may be slightly faster, but at least £70 more faster? I don't know.
