Need an apple recipie

How do,

On Friday Ill be running a cooking session with a year 6 class. the theme is british Apples. I need a recipe/recipes that will take around 45mins to and hour (no less really) to cook in total. However we have no ovens! Anyone got any reasonably healthy ideas?

Yeah we have induction hobs and most other standard kitchen equipment, so frustrating not having ovens...

Is there a way to do tart tatins pastry just on the hob?
 
Variety of apples... they choose, the first bit of the session is a taste test, they will have 8 varieties and have to give them a rating for sweet/sour crunchy/soft, then decide which is their favorite and want to use in the recipe.

The idea of a deconstructed crumble seems pretty good. We may have them making a few different things like the deconstructed crumble, some rice pudding, poaching them and putting them in yogurt.

I was thinking about getting them to make some proper custard, but I think for 10 year olds it may be a bit hard and too prone to going wrong!
 
I so wanted to do something with pork, but the class has 7 children who cant eat pork!

Now if I could find a decent chicken and apple recipe I may do that as a savory, and them some sort of caramelised apple thing for a small desert.
