They could be specced so that the Pro still had a significant upper-hand. Get the cheapest Air running Retina at the bare mimimum acceptable performance, and go up from there. The MacBook Pros could simply be updated to be more powerful, have more capacity, etc. They might go with cheaper displays for the Air too - still Retina and a massive improvement, but slightly lower quality in terms of contrast, gamut etc compared to the Pro screens. And I'm sure at some point they'll be able to throw in some new tech that would come to the Pro line first. It's a never-ending cycle.
And indeed, the Mini wouldn't have been as thin or as light at the time if they'd crammed a Retina display in it. But it's entirely possible now, while maintaining the same thickness and weight. Whether its viable in terms of production/component costs right now is another question... they might need to wait a little longer.
