Need help with an HP Netserver LC2000

I recently aquired an HP Netserver LC2000, its a few years old with 2xP3 933mhz CPUs, 1GB ram, and onboard SCSI/RAID controllers etc. Im having a couple of problems with it:

1) I know its a server, and i know its not meant to be very quiet, but it is way too loud and i would like to slow the fan speed if possible. I know there are some ways of doing this like replacing fans, messing with the 12v/5v line (which would be difficult considering the way this things cabled), but ideally id like to keep it standard so was hoping there would be some sort of setting i have missed? Possibly on the motherboard, in the BIOS, etc that i can change. I couldn't find anything related to fan speeds in the BIOS though.

2) I have no idea how to setup a RAID array with my two SCSI HDD's. I currently have Ubuntu installed on the first HDD, and i would like to use RAID as i have a second HDD with the same capacity as the first. (18GB). Is there a certain key combination i need to press? Oh, and what RAID do you think would be best for me to use? Ideally i want to go for best performance over data integrity/etc...so i was thinking RAID1?

'tis nice otherwise, apart from being ridiculously heavy! :)
