Need more cpu power, general upgrade advice

Hi,

Currently on a 4.5ghz 2600k, 32gb ram, gtx980 and a sata SSD.

I'm starting to notice my cpu is limiting me highly, I often download youtube vids and re-coding them takes ages, work with encoding and editing dashcam video's also could be faster. Also I like keeping everything running, and run an i-spy server in the background (capturing and encoding TWO IP cams), torrent client, and news clients. To give an example, my ''idle'' RAM use is 12GB and I run 120 ish processes.
I have stuff like office, teamviewer&LMI, lots of browser stuff, steam, visual studio, sql management studio, android studio, 4 ''cloud storage'' syncers, etc... running at all times.

Desktop resolution is quite high too (6400x2160), which contributes to cpu usage.

Want to be able to game no problem with all that background stuff. I run NO real time AV because if I use Defender or Avira, because I notice huge slowdowns on IOps and cpu hog on something simple as downloading a game on Steam or Torrents (I have a 500 mbit connection and an AV slows down download speeds very noticeably, as it does copying large number of files between my hdd's) .

I'd like to run the news client and torrenting in a VM through my VPN, but running a VM and VPN in general also costs to much resources atm (currently just using a proxy for p2p).

Earlier this year I upgraded to an UHD (primary) screen, and since then, I noticed huge spikes in CPU usage, even on loading or scrolling on websites.

Also I'd like to be able to record UHD gaming with less CPU/fps hit.

Games like Cossacks 3 run stuttery with 100% cpu use on all cores on 4k res, but smooth on smaller res like 1080p or 2560x1440... Generally speaking I feel like I'm being hugely limited in some games by CPU, mainly sim and strategy games, eg. Cities skylines double speed and triple speed is laggy from 100k inhabitants and I see all 4 cores at 100% regularly.

Also generally speaking, Windows 10 is becoming more an more of a hog, I've seen as much as 20% cpu use (temporarily) by explorer.exe in the background, Local security authority process, and god knows what other bloatware Microsoft runs. Also rendering websites in Chrome noticeably takes much more cpu use at 2160p compared to 1080p....
Also, VLC is buggy with hardware decoding (can't get it to work), and to slow to play x265 2160P media on cpu (stutters/100% cpu use, other software where gpu acceleration works luckily plays it fine like MPC).


Therefore I'd want to upgrade to something new with MUCH more cpu power like the new hexa cores, 8600K seems like a nice bang for buck cpu and apparently they should do 5ghz?

Is this correct? Or should I go for an 8700K instead? Or one of the ''more cored'' cpu's?

Also, can I move my Windows 10 install over from my sata SSD to an M.2 SSD? (without reinstall) or will there be ''unmountable boot volume'' shenanigans, has anyone succesfully moved an install like this? I REALLY don't want a new install, it takes me over a week to get stuff set up like I want to and move everything over. Sata to sata is no problem with similar AHCI controllers, originally this install is an upgrade from win 7, and has seen over 10 mainboards in the past years... But I'd like to profit from the much higher speeds from M.2 SSD's...

What is a good mainboard considering my requirements:
Fast cpu's available and easy overclocking (at least 5ghz hexa core, otherwise there's not enough improvement)
Fast M.2/PCIE SSD capability, no slow SATA 3 stuff.
At least 8 Sata ports (I have 6 internal HDD's and 2 SSD's)
At least 6 USB ports.
Gigabit Lan or better (dual gigabit isn't necessary, but would be nice to have)
Bluetooth would be nice as a bonus for headset (works great on laptop, would be nice to have on pc)

Are the new hexa cpu's a good-enough improvement though? How is the current gen per clock compared to older gen? Shouldn't I opt for octa?

Hmmm, they seem silly expensive in comparison, can build 2 hexa's for the price of 1 octa core pc...

You could go for 8c16t Ryzen, or higher if you go for TR or a Xeon.
From the workload you have described I would go for as many cores/threads as possible - this will be cheaper to do with AMD, but if you have the budget then Intel all the way (18 core available on the desktop) - or Xeon Gold maybe - but they are not cheap. Any board for Xeon or TR should have more than enough M2 and Sata ports, dual gigabit or 10gb ethernet should be easy to find too, Bluetooth less so (I have a tiny USB port sized Bluetooth adapter, was about £6 off of the bay)
