New Build Advice Needed Please

Hi, I need some help deciding what PC spec to purchase and build in the next few days.

My current spec is:

Dell U3818DW 3840x1600@75Hz
[email protected]
Gigabyte Aorus Gaming 7
Gigabyte 2080 Super Gaming OC 8G Rev 2.0
Team Group Dark Pro "8 Pack Edition" 16Gb (2x8Gb) DDR4 PC4-28800C16 3600MHz
Samsung SSD 960 PRO Polaris 512Gb M.2 2280 PCI-e 3.0 x4 NVMe
Samsung SSD 850 PRO 256Gb SATA
WD 3Tb HDD
Fractal Design Define R6
Fractal Design Celsius S36 360mm AIO
Windows 10 Pro

The contents of this PC, other than the AIO and WD 3TB HDD are going to my daughter into a new Fractal Design Meshify C Case I've already got.

As such I'm in the market to build a new machine for myself and get a new 27" or 32" monitor, an AIO and a set of small PC speakers for my daughter's build.
NO PSUs are needed for either build as I have a Seasonic Focus Plus 750W Gold in mine and a Corsair RM650 in daughters PC.

My budget is £2K - £2.5K for the new contents of my machine, the AIO, the speakers and the monitor.
My use is work as a dev and non-professional gaming, games such as Metro Exodus, Borderlands 3 and Outer Worlds. The PC will also drive my room scale HTC Vive setup.

I'm not sure whether to go Intel or AMD this time and whether to get another 2080 Super card to drive my U3818W.

Any help greatly appreciated, thanks.

Sorry for the confusion, but you got it dead right. Thanks for taking the time to read it and give me your suggestion. Daughter will use hers for gaming and school work. I've always gone for intel in the past but been curious about building an AMD rig for some time. Will take a look at the components you've listed. Thanks again.

She will have a sweet build that will last quite a few years hopefully.
Trying to see what the difference is between the 2080 super windforce and the existing one I have (that I got for an amazing £620 at another retailer last Christmas) and work out which one to keep for myself.

I would love to upgrade my Dell U38 to get more than 75Hz, but nothing else compares to it in terms of functionality, such as being able to connect my work laptop to it via usb c and the built-in KVM that allows me to use one keyboard and mouse for both the laptop and desktop.

Thanks Sparx for the suggestion but I don't think I can get away with another screen.

Joxeon, unfortunately I can't wait as much as I would like to as I need to get my daughter's machine up and running in the next week or so.
 
Going to wait on the GPUs card purchase.
If I was to go for a 32 inch monitor instead of the LG would the gigabyte G32QC be a good option?

With the NVMe drive is it worth going for the WD black rather than the blue for the extra £15?

So, going to buy this setup with the G32QC and wasn't going to buy a graphics card, but now the 980GTX has decided to stop functioning!
Will I be able to drive the G32QC with a 2070 Super at 2560x1440 165Hz (or thereabouts) with the majority of settings set to High?
Or do I bite the bullet and keep with the 2080 Super that I initially looked at?
