Im going to be getting the
Intel Core i7 875K 2.93GHz and Asus P7P55D-E Deluxe

What would be the best DDR3 overclockable memory

Personal view would be change the cpu to one of these:

Is the i5 a better or faster option?

It's a bit of mixed bag, link below shows comparison between the 860 & i5 750, save you £100 ~ with very small performance difference. Overclock to 4ghz and you be away

Another option could be the Intel Core i7 950 3.06GHz and Asus P6X58D-E

Which is cheaper except I would need triple channel ddr3
