New build question

Hello
New to Overclockers but was hoping for a bit of advice regarding the new build I'm undertaking, please.

Got myself a Gigabyte GA-P55A-UD5 P55 motherboard, two Hitachi 2TB Desktar HDDs and an Intel 128GB SSD. (All going in an Antec 183 with an Intel i7 875k and Sapphire ATI HD6970 2GB)

I want to use the SSD for OS and programs and keep all my data - lots of music, video and images - on one of the HDDs, with the other used as a RAID drive to back everything up. (Might seem excessive but I was burned recently by a corrupt HDD and I've not been the same since! Devastated wasn't the word)

I have ideas how to do this, and I think RAID 1 would be sufficient, just a straight copy of the data, but was wondering what the Overclockers hive mind could suggest as well!

Also, the motherboard I have has 6 x SATA 3Gb/s connectors (SATA2_0, SATA2_1, SATA2_2, SATA2_3, SATA2_4, SATA2_5) supporting up to 6 SATA 3Gb/s devices
Support for SATA RAID 0, RAID 1, RAID 5, and RAID 10.
There are also 2 x SATA 6Gb/s connectors (GSATA3_6, GSATA3_7) support for SATA RAID 0 and RAID 1ï·
I obviously want to connect the SSD to one of the 6Gb/s sockets, but should I connect both HDDs to 3Gb/s, or does it not matter if one is plugged into the remaining 6Gb/s socket. The two HDDs will be run in a RAID 1 set-up.
