New Build - Storage setup for ONE SSD and TWO NVMe?

Hello,
Im going to be building my first PC this weekend, I've been scratching my head for a while about what to do with disk managment/partitions when I get to installing the OS. I know I am definetly over-thinking it but I would like things to be as neat and organised as possible. Some experienced advice would be really helpful to help me come to a conclusion.

SSD = Samsung 870 EVO 1TB
Using it for C/drive in my laptop, would ideally like to wipe it clean if/when I install it in new PC. Would anyone suggest I install my OS on the SSD, or I could leave it out of the build entirely?

NVMe = WD_BLACK SN850X 1TB and Samsung 970 EVO Plus 1TB
The 970 EVO has been used before while the SN850X is brand new and generally better. I wanted to use one NVMe purely for games and related files. Should I only install the two NVMe for games and OS while leaving out the SSD entirely?

Anyways I have listed some of my thoughts but would really appreciate an experienced opinion. Just to be clear this PC will 99% be used for gaming only. Thanks!

The OS is accessed all the time, it should be the fastest drive you have.
If you really want to be neat and tidy then have a 200mb partition on the WD drive for the OS, the rest for gaming. And the second 1TB drive for gaming.
The Samsung 870 have a poor reputation for suddenly failing with weird errors. No need to throw it away, but don't put anything really important on it.

I doubt you'll notice the difference.

Load up notepad and try and see how much slower it is in the SSD ;)
