New build, too many options!

Firstly, thank you all in advance for any advice given l really appreciate it. The situation is that my current pc is a Lenovo AIO and l have a huge desire to switch from the PS4 to PC gaming. The AIO will be kept as a dogsbody pc as to be fair its great at what it is meant for.
I have never built my own pc before but am willing to give it a go, although l am mindful of the three year warranty which to be honest will probably sway it. On to the new requirements, for myself l want to play MSFS, F1, first person shooters, try Cyberpunk and essentially just want to be able to play every thing at the moment - yes l know....haha, while my son wants to play things like Minecraft and Roblox etc. One thing l would like is to future proof as much as possible and try to avoid upgrading for 2-3 years, this is the reason l have gone down the AM5 route. I currently have a 27" 1080p monitor spare which is fine for a couple of months until l get hold of a decent 34" ultrawide. The budget is £2.5k tops and l will post the 2 systems lve been looking at below.
I am quite set on the Ryzen 7700x for both systems and l think l am happy with the B650 atx motherboard, along with 32Gb of 5600 C36 RAM. I suppose the real dilema is the GPU - was set on the RX6800xt, then l spotted the 4070ti in the Khopesh build.
I am erring toward the 6800, but am l on the right track and anything else l should know/change? Thanks again.

Oooooh that is superb, thank you! I cant see that AIO on overclockers? but hell yeah for the 7900 XTX it would be worth it!

You mean the Thermalright air cooler? Yeah, they don't stock it I'm afraid, but it is about £40. You could look at the Deepcool AK620 too, but I'm not sure how it performs versus the Thermalright.

I'm afraid OCUK don't stock either cooler, but the AK620 is about £60.

You could ask them if they can suggest something cheaper (i.e. that you want an XTX in the build, but still under, or very near £2500)?

Its a hgood suggestion and i'll give it a go, lm going to order on the 26th ish so maybe even things may have changed by then lol
