New build, which Windows?

Hi i'm thinking of building a system which i will be using for the purposes of HD video editing, photoshop, word processing. What is the most basic (cheapest!) version of windows recommended for such a system?

It's very similar to Vista from a usability standpoint, but it's simply better in virtually every area.

You could make the argument that Vista is more tried and tested than Windows 7, but I would go with Windows 7 if I was in your situation simply because it's newer and more modern than Vista.
