It's best to build your own custom loop, this way you can another radiator and pump (MCP655) to help cool your components. I mean you're going to dismantle this loop anyway to include your 3x 6970's. And if you do decide to build it yourself, then you'll feel comfortable draining, dismantling and adding vga blocks.
Best way to learn what works, how and why is to do your research, choose your own parts, build your own custom loop and troubleshoot any problems as and when they arise with support from the forums.
Remember if you wish to watercool those 3 GPUs with full cover blocks you'll need v2 (version 2) 6970 blocks as those cards are a non-reference design. The blocks will cost approx 70 quid each thereby adding at least a couple hundred to your costs, then factor in cost of additional barbs/compressions.
The ATCS 840 is a good case but there are better options if you are going for the kind of WC rig you've specified.
I think what I might do is get my CPU water-cooled first and then wait for the 7000 graphics series to be released before committing to water-cooling the GPU's.
I am getting 3x27" monitors for work shortly so need the power to push them for weekend gaming.
