+1 on going crossfire on the 5830, it beats any other single card setup for £200.
However, does your motherboard support Crossfire/SLI? And is your power supply up to the task?
-1 for adding another 5830, because it's not a good idea to CF 1GB cards.
Save the money for 28nm cards.
If you CF with another 1GB card, you get a huge boost in GPU power but still lack the vram to enable high AA settings, making the money you spent not fully utilized.
If you go for a 6950 2GB, you won't notice much fps improvement due to having roughly the same GPU power.
So I would wait.
You'll only notice a difference by upgrading to 6950 2GB CF, or a 6990 etc, which is out of your budget.

I would wait, by if you want more power now then get another 5830.
1gb VRAM is fine and will continue being fine for some time now. Not completely futureproof but will atleast last you long enough until some time after next gen of consoles arrive.
