New Conroe build, graphics help please

Have managed to avoid the upgrade bug for longer than should be humanly possible.

About to build a new gaming machine and could use help on the graphics, have always been a bit of an Nvidia fanboy, but they all seem excellent now, so 7900GTX in SLI, 7950GX2quad, x1950XTX in Xfire or one of these in single? Am thinking with the screen I want some dual card solution.

Here's the rest of the build, will put together a custon water cooling setup for the CPU and possibly the cards

Need to chose a decent case to put it all in too!

Yeah, unless I wait for another motherboard, but, not seen any decent SLI ones on the horizon.

And I think right now there is about 100 difference between the 1950xtx in xfire and a 1900xt set up, I don't mind the money difference, but with the 1950 being so new there are no decent reviews or benchies to show how much headroom the core and ram have, if any.
