how well would the cooler and PSU cope with the current setup, considering the overclocked CPU?

and if in the future i added another 580 in SLI, would this same setup still be fine?

power supply should be fine for SLI 580's. the power supply calculator i use says you'll need a little over 750W, so the 850W will be perfect
 
The cooler seems to be a lot of money. I'd probably go with a H70, Antec Kuhler, or a top air cooler, like the Thermalright Archon (BIIIG) and such.

Dunno about the TX and SLI, but that's a lot of power. The next step would be 1000W, and somehow that seems overkill.
