New gaming PC around £2000 to spend.

That would handle most games easily. Which games are you looking to play ?

I don't know much about PSU's but I've heard it's best to go silver,gold and upwards

Cyberpunk/outriders/wow/ other mmos when they eventually come out and Diablo 4 when it hits. will take advantage of Xbox game pass as well. So looking to run most games easily with the setting cranked up if possiable.
 
9700K is still a good CPU and moreover at 4K there's less load on CPU usually, however you do have newer and faster options like 10700K or 5600/5800X, so try and look for something with those instead. Also, OcUK build good systems but unless otherwise specified they use Kolink PSUs which are best replaced with something better by contacting them and requesting the change.

Get Ryzen 5600 or 5800 with Nvidia 3700 or 3800. You are good for few years
 
Id go for something like this then ask OCUK if they can upgrade the 3070 to a 3080 which should be around £200 more.
