New Gaming Spec CPU / MB help req'd

I'm totally confused, I currently have no PC in the house (lots of apple kit) , but I'm looking to embark of a bit of a gaming project - 3 monitor driving sim :)

I have not built a PC for over 10 years and I have totally lost track of which kit I should be looking to get, my biggest confusion is MB and CPU, I love to fiddle so I will be overclocking.

I'm pretty set on a PHANTEKS ENTHOO EVOLV Case and a 980 Ti gfx card

I love the idea of doing water cooling build

I have plenty of hard drives and a couple of SSD's from a spare NAS that I can rob and at this I'm not looking for a monitor

Budget £1000 -1500

This is my first pc build for over 10 years, i have a SSD, and a couple of HDD's and a monitor

Am i missing anything to complete this build, i do have a crappy keyboard and a mouse i could do with some new ones, any recommendations, i need an ambidextrous mouse as I'm a lefty

Everything is landing on Monday, if I'm missing anything to get me up and running i would like to order it today tomorrow so i have it for an xmas build ;)

I think the Zowie mice are all ambidextrous and they are very highly praised.

Is a mechanical keyboard an option? They are brilliant bits of kit.
