New GPU - Advice

My current rig is in my signature and looking to do a small upgrade this month.

My plan is to get a 6950 and flash to a 6970 + watercool. But can I do the following and if so via what connections?

Display 1 - 24" Monitor - 1920x1080 (Thinking of buying)
Display 2 - 24" Monitor - 1920x1200 - DVI only
Display 3 - 100" PJ - 1920x1200 - HDMI

Also for gaming how can I get my amp to do 5.1? I can only get Stereo unless the source is DD, such as a DVD. Currently use a SB X-Fi Gamer via co-axial.

In a couple of months I will be doing a full system rebuild and will get a i7 2600k under water and buy another 6950 for x-fire. Will it look weird using both of the 24" screens for games as they have different resolutions?
 
Don't know if you could encounter problems if the resolution of 3 screens are slightly different.

I would suggest video cards with at least 1.5GB vram if you plan to play games with 4AA.

I currently only game on the PJ or 24" monitor. That will remain true but would like a 2nd monitor for multitasking when at the desk. But if I got another 24" monitor some games such as RTS I could use the two monitors for...but sounds like the resolution could be an issue.
