So what's a good card to pair with a ryzen 5 3600, at the moment I'm using a Rx480 8gb but it struggles a bit at 4k.

Got a budget of about £300, don't really care if its amd or nvidia.

Cheers.

For 4k you need bare minimum a 5700xt or 2070 super.

Ideally a 2080 super or Ti.

You would be better off going 1440p if you want to run games maxed out and then get a 5700xt or 2070 super.

Resolution is your issue with your budget. 4k gaming is reserved for those with deep pockets.

Saying that £300 ain't gonna give you the best performance in 4K maybe try for 1440p

Wait a couple of months and see what the next Nvidia cards offer. 3060 will probably give good 1440p performance, might need a 3070 (out of budget) for 4K.
