New i7 build questions

Hey all, I'm looking to build my first PC (getting a friend who has built PCs before to help me put it together!) and I'm hoping to get some feedback before I order the parts. I've read around on these forums and other sites so I'm pretty sure I will be fine, just want to be even more sure!

Specs:
Mobo: Gigabyte GA-X58A-UD3R Intel X58 Socket 1366
CPU: Intel i7 920 2.66GHz 8MB Cache Socket 1366 Retail
Heatsink: Titan TTC-NK85TZ/V2 Fenrir CPU Cooler
RAM: Corsair XMS3 6GB (3x2GB) DDR3 PC3-12800C9 (1600MHz) 1.65V
GFX: XFX ATI Radeon HD 5870 1024MB DDR5 PCI-Express
PSU: Corsair 650W TX
CASE: Coolermaster CM-690 II Advanced Dominator
HDD: 2x Western Digital 500GB SATA II 7200rpm 16MB Cache
Fan: Sharkoon Silent Eagle 1000 120mm Case fan (for intake on side of case)
Thermal paste: Arctic Cooling MX-2 Thermal Compound
(Using the DVD drives/Memory card reader from this PC)

Couple of questions:
  • I'm only wanting to mildly overclock the CPU, to around 3.4Ghz~3.6Ghz (depending how far I can go without adjusting voltages); will that heatsink be alright to keep it cool?
  • The mobo doesn't say 1600MHz RAM is supported, would it just be case of upping the voltage in the BIOS to get it run at that speed, or would I have to alter voltage and speed/frequency?
  • If I have to alter the voltage for the RAM, 1.66V will be safe, even though max is meant to be 1.65V, right?

Should have noted, I'm using one of the HDDs from current PC, getting another to match. Though I'll have a look at that one you suggested hlennie, probably get that instead.
 
yeah, I was considering getting the 930, then saw it'd make more sense to get the 920 and a better heat sink with the money saved to OC it.

EDIT: Thanks for all the help, ordered the parts. Got the 750W PSU to give me more options for any future upgrades.
