New Intel based system needed, advice please!

Hi, I am still running Abit NF7-S based systems and so it is time for a bit of an upgrade. I have been having a browse and these cpus seem interesting:
Intel Core 2 Duo E6850 "LGA775 Conroe" 3.00GHz (1333FSB)
As I am a bit out of touch please spec me up a system based around good quality components.
I am not looking for cheap kit, just good stuff that will allow the cpu to do its best. My current systems have been built with Abit or Asus motherboards,
Corsair XMS 3500 ram, ATi graphics card, mobile XP cpus and slk 800 coolers.
Hard drives run in raid 0. All computers are overclocked so I will probably do the same again.
Please give me a starting point!!

Do you play games? If so, at what resolution? Roughly how much are you looking to spend?

Hopefully the computer will be powerful with super graphics as my 2 sons are keen on games.
