New Mac - transfer via Time Machine?

I'm expecting a new Imac today to replace my mini. How do I go about transferring documents, applications, etc over from my Time Machine disk? I assume it can be done like that, yeah? Anything I need to be aware of? Can I choose which bits get copied over? Obviously I don't want to copy the whole state of the old installation over, so can I pick and choose?

Yes, when you install OS X you have the option of restoring from a Time Machine backup.

AFAIK it gives the option to pick and choose.
