overclock it yourself.

This is both cpu's at stock speeds - http://www.anandtech.com/bench/Product/143?vs=191 some of the graphs are lower is better.

Looks a nice build, but I don't really want to overclock again unless its easy with this mobo etc?

Also, if i were to overclock that what type of speeds could it go to? Also, will that CPU cooler be okay or will I need watercooling?

it really only as good as high quality air cooling but just quiter and less room in the case...personally if youre thinking of water cooling save alittle and do it properly.....with good water cooling you can get crazy overclocks whilst still having very good temps :D

How much would a proper watercooling setup cost and what speeds would the Intel Core i5 760 2.80GHz get to?

Also is the Gigabyte GA-P55-USB3 a good mobo for overclocking? Does it have an easy enough interface?

The Gigabyte should be a fairly easy to overclock, I use the X58 UD5 on my i7 setup and found it very easy.

Watercooling your looking around £150.00 ~ for the gpu, might be a little cheaper.

You may not get much more on speed, but will depend on chip and skill.
