Remember, that's the total power consumption for the entire system, which you'll note uses only a dual core chip as opposed to a Quad like yours, though I doubt you'll be pulling much more then 500w under load, unless you have a stack of HDDs/Fans or WC gear.
Mod's on Corsair's forum suggest that an HX620 would be fine for 2x 4870's in crossfire, and one particular review seems to confirm as such:

I can't believe that a single 4870x2 will draw more power than two 4870s, indeed, it ought to be slightly less, so I'd certainly give it a go.
