i wouldnt bother with the E8500, its £80 extra for 160Mhz and it has a 9.5x multiplier which may cause issues. I'd get the E8400 with the 9x multiplier and use the fine tune to add .5x to make it into more or less a E8500. With the money you save you can get 4gb of ram which would be more benficial. Also i wouldn't bother with the two ATi cards in crossfire, i'd get a nvidia 8800GTS 9800GTX for those resolutions and you'll save some dosh as well.
 
Replace the cpu cooler with a thermalright ultra extreme (+120mm fan) or a tuniq tower

For the graphics, there are new cards out next month, but if I was to buy now it'd be an 8800GTX, that'd be better than the crossfire arrangement you have listed.

A corsair HX620 modular psu would be enough for your needs, and it costs less, as well as being very highly recommended by a lot of people.

I'd also have a good think about whether DDR3 RAM is worth it, most people would say it wasn't at present.
 
as mentioned i'd wait and see what the new gfx cards are like before buying.

wouldnt consider ddr3 at the moment, can get 4gb of ddr2 for less than 2gb of ddr3, change the mobo to the x38.
 
change the cooler (true120 or the noctua, i have the zalman myself and will be upgrading at the next possible oppurtunity) and the cpu its not worth the extra money over the e8400

apart from that all good, report back on that mouse i've been thinking about getting one for a while but have found one in an actual shop to look at yet

the reason i have 2 GFX is cause i will have 3 screens.
