So I'm kind of mulling the idea of a new TV.

Currently have 2 - A Samsung MU6400 49" (Bedroom) and a Samsung NU7400 55" (Main room).

If I got a new TV the MU6400 would be sold and NU7400 put in bedroom.

They seem to have brilliant pictures but I just feel perhaps I need better HDR performance, should I be going QLED or OLED?

Budget of 700 is there anything around the 55-66" mark that would be a worthwhile improvement?

Not at that budget.

But for a bit more the Sony xf90 is still available. Personally I would save up for an OLED.

See OLED are around 1K, but are OLED's around 1K worth it?

My GF does pause the TV for what seems like forever sometimes, should I focus more towards QLED type tech?

I wouldn’t buy OLED if you pause a lot. As for QLED in this price range the q70 is marginally better than the Sony xf90 but it’s more expensive.

My missus pauses all the time, and I mean all the time, sometimes for hours when on Sky Q so no screensaver.

Never had any sort of image retention from her doing that on our 55" LG C7 with 2.5 years abuse.

I'll echo the XF90 sentiment. It's the only thing worth stepping to from what you currently have. They go for quite cheap as well, unlikely you'll still have as good offers next year.
