New upgrade, out of the loop, confused over new hardware

Hi everyone

I'm pondering on some new hardware after an old PC has conked out, I'd love a bit of advice and pointers in the right direction please.

I'm very behind the curve with the latest technology and chips (I'm currently researching to try and catch up!).

My main machine at the moment is:

i7 3770K
32GB RAM

It's used for everything from Photoshop, to video editing, video recoding and gaming. This machine hasn't broken but except for the GPUs which I would put in the new machine, it would become the secondary PC.

One of the main thing I want the new machine to do is speed up the video recodes I do (frequently working with 1080p and potentially, 4K footage soon) but also be nippy with gaming etc.

Currently when I'm recoding with Handbrake, it will use ALL the system resources I give it, so CPU at 100% and the RAM maxed out as well.

CPU

I've been considering three chips:
i7 4790K (quad core)
i7 6700K (quad core)
i7 5820K (hex core)

I've pretty much discounted the 4790K now due the difference in the benchmarks between that and the 6700K, it seems to be beaten on pretty much everything, looking at Andantech CPU benchmarks.

That puts the 6700K against the 5820K…

It seems that for general purpose the 6700K takes the cake most of the time, I assume due to the higher clock speed, but in some specific cases, like second-pass video encoding the 5820K does do better, I'm guessing because of the extra cores.

I am leaning towards the 6700K but I would like to hear some opinions if I'm on the right track or not.


Motherboard
I really have no idea here…
I suppose the main things I am looking for are a good amount of SATA slots as I have a lot of drives in my machine (8 currently), and plenty of USB connections as I often connect multiple external HDDs to the machine as well.


RAM
I don't need the fastest RAM in the world, I won't be doing mad overclocking, a good stable long lasting workhorse is all I need.
I'm thinking 64GB and potentially one of these Corsair sets -

8 sticks - cheaper...but more chance of one failing

Is there any issue running 64GB RAM these days? Any applications or games that don't support that amount of RAM?


CPU cooler
Again, these have changed massively since I last bought one! Currently I have a massive dual fan cooler on there but it's so massive I think I'd like to try and reclaim some space back in my case this time and go for a sealed water-cooled setup. We have a Corsair H50 CPU cooler on an old machine and that's always been perfect...is a setup like that recommended still these days?


So basically…

Am I making the right decision looking at the 6700K CPU?

What motherboard would be a good one to go for?

Does the RAM I've selected go with the rest of the setup and is 64GB fully compatible with programs these days?

What CPU cooler would be a good one to go for?

Only thing is, I've never overclocked (I know, shocking for this forum!), and as it'll be a work machine as well it needs to be absolutely stable, I don't want to have to keep checking the temperatures all the time or it crashing due to instability, especially an hour into a recode!

Hmmm, that's strange, all my machines have Corsair RAM in them, I think I've only ever had one bad set...luck of the draw I suppose.

Hmmm, I hadn't considered that with the cooling, it was space I was trying to save really if I needed to get inside the case.
